Exotic Mushroom Wafu Spaghetti Recipe
Did you know that pasta restaurants in Japan serve soy sauce based flavoured pasta dishes? They are called "Wafu (Japanese Style) Spaghetti" You will find different categories such as, tomato sauce based, garlic oil based, cream sauce based AND wafu (soy sauce based) in the restaurants.
One of our private cooking class customers requested some unusual recipes so we cooked this wafu spaghetti dish. They really liked it so I am sharing this recipe with you too.
Ingredients (serves 2)
200g spaghetti
2 knobs garlic - finely chopped
100g exotic mushrooms (shimeji, enoki, shiitake, oyster etc) - trimmed and cut into small pieces
2 tbsp olive oil
2 tbsp butter
4 tbsp SAORI Tsuyu (Seaweed Sauce)
1/2 sheet nori seaweed - cut into thin strips
1 tbsp bonito flakes
salt & pepper to taste
1: Pre-cook spaghetti according to package instructions, cooking for 1 minute less than indicated to keep the spaghetti al dente.
2: Meanwhile, in a frying pan, heat olive oil over medium-high heat.
3: Add mushrooms and cook for 3-4 minutes, until slightly soft and golden brown.
4: Add 2 tbsp SAORI Tsuyu Sauce then continue to cook for a few more minutes
5: Add cooked spaghetti then add another 2 tbsp SAORI Tsuyu Sauce and butter
6: Mix well and then add salt & pepper to taste.
7: Serve in a bowl then garnish with nori seaweed &?or bonito flakes
