vegan miso ramen recipe
Ingredients - (serves 4)
200g semi fried tofu - minced
2 tbsp sesame oil
2 tbsp grated ginger
2 tbsp grated garlic
1/4 grated apple
1/2 onion - finely chopped
2 spring onions - finely chopped
2 tbsp peanut butter
1 tbsp fermented Japanese soy sauce
1-1.2L water
1 satchel SAORI 100% Natural Japanese Dashi Broth
6 tbsp white miso paste
1 1/2 tbsp brown sugar
4 noodles servings
salt to taste
pepper or chilli for garnish
Vegetable topping
- bean shoots, shredded carrot, spinach etc
SAORI Japanese Rayu Chilli (*optional)
Recipe
1: stir fry ginger, garlic and spring onion in sesame oil until they look burned. Add minced tofu , apple and onion and continue to cook for another few minutes. Add/flavour with fermented Japanese soy sauce towards end of cooking.
2: add cold water and dashi stock, bring to boil and then simmer for 10-15 minutes
3: meanwhile, cook noodles in a separate pot
4: add miso paste, brown sugar and peanut butter into the soup
5: add salt to taste
6: serve cooked (and rinsed) noodles into 4 bowls
7: pour on the soup, garnish with pepper or salt
8: place on vegetable toppings
9: drizzle on SAORI Japanese Rayu Chilli
