How to make homemade ham

I always try to avoid food additives as much as possible but natural foods can be really expensive (+ still might contain some additives) . I kind of have no other choice than to make just about everything we eat myself. Now I can EVEN make ham! It tastes SO MUCH better than anything that you can buy in the shops. It has become yet ANOTHER thing that I can't buy any more. It takes 3-4 days to make but don"t worry...the actual preparation time is really fast and easy.




Pork Loin - 1kg
80g sea salt
20g brown sugar
6 tbsp coriander powder
4 tbsp black pepper
6 slices ginger
6 slices garlic
herbs - a few bay leaves, some oregano, thyme etc
4 cups water

1:to make marinade, combine sea salt, brown sugar, coriander powder, black pepper, ginger, garlic and herbs in 4 cups water and mix well. Simmer the marinade mixture in a saucepan for 2-3 minutes to melt the salt and the sugar (Do not boil). Leave mixture to cool down completely.


2:stab both sides of pork loin with a fork.


3:marinate pork in mixture in a sealable plastic bag or a plastic container for 3-4 days in a fridge. Turn the meat occasionally so that the meat is marinated evenly.


4:wrap the meat in cling wrap and then wrap in foil.
5:Put the meat in a pan and add just enough water to cover the meat and cook on a medium heat. Once the water boils, cook for a further 15 minutes and then stop cooking.
6:wrap the pan in a bath towel and leave it for 3 hours. This will slow cook the meat to perfection.
