Kimchi Tofu Udon Noodle Recipe - serves 2
This little spicy udon noodle dish is a fantastic meal to make you warm. Since I stared making own kimchi, this dish has became a regular for me in autumn & winter. Stir- frying the kimchi and putting in a little bit of miso gives it more complex flavour.
Ingredients
* 2 bunch udon noodles
* 1 tbsp sesame oil
* 2 tbsp spring onion - finely chopped
* 6 slices kimchi
* 50g firm tofu - cut into cubes
* 100ml SAORI Tsuyu (Seaweed & Soya Japanese Sauce)
* 100ml hot water
* 1 egg - beaten
* 1 tbsp miso paste (optional)
* grated daikon for garnish (optional)
Kimchi Tofu Udon Noodle Recipe
1: cook udon noodles in hot water (cooking time depends on the product brand)
2: to make the soup, stir-fry kimchi, spring onion and tofu with sesame oil in another sauce pan for few minutes.
3 :pour SAORI Tsuyu Sauce and hot water into a sauce pan.
4: when the soup starts to boil, add egg and cook for a further few minutes. Put miso paste in a soup and stir well.
5: drain the cooked udon noodles and then serve in a bowl.
6: pour the soup on top of the udon noodles. Garnish with daikon .
